Nicholas Roberts adds cheese selections

Peter Troilo, managing director of Nicholas Roberts has announced that in compliance with Connecticut State Consumer Protection regulations, the company will now offer a line of farmstead and artisan cheeses along with fine wines, artisan spirits and craft brewed products.

“We are particularly pleased to kick off our entry into the fine cheese business with the award winning farmstead cheeses made by the mother and son team of Elizabeth and Mark MacAlister at their Colchester farm, Cato Corners” Peter Troilo said.

The management and sales staff at Nicholas Roberts have spent the past several weeks tasting and judging a variety of cheeses available in the market place. The company’s aim is to provide the marketplace with farmstead and artisan cheeses from New York, Connecticut, and other New England states. Farmstead cheeses are cheeses made by farmers who herd their own cows. Artisan cheeses refer to cheeses produced primarily by hand, in small batches, with particular attention paid to the tradition of the cheesemaker’s art.

According to Mark MacAlister, Cato Corners Farm keeps a herd of approximately 40 Jersey cows. All the cheeses made by MacAlister start with raw milk from their herd. Raw milk cheeses have several health benefits including a generally higher protein level.

Now Nicholas Roberts’ clients shopping for wine, spirits and brewed products can buy quality cheeses to enjoy with their beverages.

The company plans to take small steps in developing its relationships with various area cheese makers. According to Troilo, studying cheese is as complicated a process as learning the variances and subtleties of well-made wine, spirits and brewed products. He said that the key is to associate with quality producers who focus on the art of their trade. Troilo said that shaping a broad portfolio of cheeses will take some time but he believes Nicholas Roberts is off to a good start with the Cato Corners Farm. Weekend cheese tastings are planned to help their clients become familiar with quality farmstead and artisan cheeses.

Nicholas Roberts will hold a wine and cheese tasting on Friday, March 20 from 6 to 8 p.m. A beer and cheese tasting will be held on Saturday, March 21 from 2 to 5 p.m. The store is located at 1053 Post Road, Darien.
